Restaurants at Woodleigh Chase Offer Something for Everyone

As new residents continue to move into their apartment homes at Woodleigh Chase, a brand-new Erickson Senior Living community in Fairfax, Va., they're getting to experience amenities they'd previously only heard about. 

Among these amenities are three outstanding dining venues, each serving up their own array of delicious menu items. 

"Our Signature Dining program emphasizes preparing cooked-to-order meals," says Michelle Aylor, Woodleigh Chase's director of dining services. "Residents are savoring local favorites made with fresh ingredients each time they dine."

Winning team

The full-service Providence restaurant features favorites like filet mignon, crab cakes, pad thai, pistachio-encrusted salmon, and chicken piccata. 

The Cardinal Café, a casual lunch and dinner spot with alfresco seating, has a variety of options including flatbread pizzas, grain bowls, sandwiches, and wraps--plus some fun specials like Taco Tuesdays and Wing Wednesdays. 

The Blue Jay Pub is home to an expansive bar and inventive drink menu, as well as snacks and shareables. 

"We are thrilled to have a talented culinary team coming up with amazing menus at each of these restaurants," says Aylor. "Each menu is created seasonally using the most flavorful produce available." 

Aylor works closely with Executive Chef Louis Violetta, who oversees the culinary program at Woodleigh Chase along with the chefs de cuisine in each kitchen. 

"We enjoy finding ways to satisfy many different palates and preferences. When you add in our top-notch service, it ensures an excellent dining experience for our residents," says Violetta. "And with summer right around the corner, we're looking forward to hosting fun events like an outdoor block party with different food stands."

Culinary veterans

Aylor and Violetta both developed their culinary and leadership expertise at Erickson Senior Living communities. 

Aylor has been with the company for 17 years, starting as a student server at Greenspring in Springfield, Va. Violetta began his career 11 years ago as a prep cook, working his way up to executive chef at Ashby Ponds in Ashburn, Va., before joining Woodleigh Chase. 

"I'm really excited to have Chef Louis on board at Woodleigh Chase," Aylor says. "He goes out of his way to ensure our kitchens have everything they need to succeed."

The duo notes that their secret to pleasing diners is developing meaningful relationships.

"We welcome feedback from residents. If a specific dish is not on the menu, we will do our best to add it," says Aylor. "Being responsive to resident requests helps us create a better experience for everyone. We also love to stop and chat with residents while they're dining--not only to hear about their food, but to ask about their family and friends," she adds.
