Serving Up Delicious Dishes at Fox Run

Residents at Fox Run in Novi, Michigan enjoy a variety of options for an incredible restaurant experience.

"I'm a good cook, and I like to cook--but I love when other people cook," says Gail Gualdoni, with a laugh.

Lucky for her, she hasn't had to cook once since moving to Fox Run, the Erickson Senior Living community in Novi, Mich., with her husband Jim.

Thanks to the Signature Dining program, Fox Run residents savor cooked-to-order meals made with the freshest ingredients at six on-campus restaurants. And because the menus feature a variety of local favorites, modern takes on classic dishes, and innovative fare, there's always something new to try.

"I love the choices at Fox Run!" says Gail.

"We have many restaurants we can go to. Each one has a multipage menu with a lot of options," adds Jim. "We have the freedom to choose what meal suits us on any given day."

Something for everyone

Dining choices at Fox Run range from casual cafes to full-service restaurants, where specialties are impeccably prepared and plated.

Grab a well-balanced breakfast at Campus Coffee and Market to start your day off right. You'll find breakfast sandwiches, fruit, parfaits, and some lunch items waiting for you.

Looking for a pub-style environment? Check out Midtown, which serves up pizza, salads, sandwiches, soup, and some dinner entrees.

For a quick bite between club meetings, visit the Hunt Club Cafe, where salads, pizza, and hot and cold sandwiches are always available. This casual spot also features a chef's creation with a daily changing menu.

If you feel like a more formal dining experience, check out The Fireside or Signatures. Although the menus are updated regularly to reflect feedback and seasonal availability, recent specialties have included bourbon-glazed shrimp, baked chicken breast, and beef goulash. Both restaurants also have three weekly specials to delight your taste buds.

Want to try small plates or "tapas"? Head to Great Lakes Bistro and enjoy four courses such as corn and black bean salad, cold peach or raspberry soup, mussels marinara, flat iron steak, and beef Wellington.

"We also serve local favorites, like the Coney Dog--a chili dog with Detroit-style chili," says Dining Services Director Doug Sullivan. "It's huge around here!"

Residents also experience fun dining events like Taste of the Middle East and Indian Cuisine Nights. A Seder meal for Passover and specials for Chinese New Year are also offered.

Healthy eating made easy

With so many delicious and healthy dishes to choose from, it's easy for residents to get all the nutrition they need.

And with the My Erickson app, nutrition information you would find on grocery items--including ingredients, calories, and fat content--is accessible for every meal with just a few taps.

Residents can also search for foods according to various specialty options, like allergies such as milk, wheat, shellfish, or nuts, as well as diabetic, heart-smart, vegetarian, and gluten-free selections.

Powerful partnership

To ensure resident satisfaction at each of these unique eateries, Sullivan and his team of expert chefs partner with the Resident Advisory Council's Dining Services committee.

Jim, a member of the committee, notes that the team is very receptive to input.

"Dining Services really listens to residents and is constantly working to improve all aspects of dining," he says.

"We pride ourselves on having open communication with residents," says Sullivan. "We also make sure that residents know we hear them. If a resident feels comfortable giving us feedback directly, we make sure to follow up with them and tell them what we've done in response to it."

In addition to sharing their thoughts, residents are encouraged to complete comment cards and attend monthly Dialog with Dining sessions.

"The executive chef, the dining management team, and I share updates," says Sullivan. "Then, we open up the floor to residents. It's a great opportunity for us to address suggestions right there on the spot."
