Special evening of food and fun highlights community's culinary talent
Highlands Ranch, Colo. – Wind Crest, a continuing care retirement community developed and managed by Erickson Living, recently hosted its second Taste of Wind Crest, a special dining event that highlights the community's creative culinary talent. More than 130 residents attended.
Taste of Wind Crest originally began in 2018, with plans to host the event annually. The resident response was so positive that the community decided to put on the event twice a year starting in 2019. The next Taste of Wind Crest is scheduled for September 2019.
This year's spring event featured six teams made up of two culinary professionals and one member of Wind Crest's Executive Team at each station. The teams carefully crafted one savory and one sweet dish for residents to sample. After tasting, residents had the opportunity to vote for their favorite dish in each category, as well as best station decoration and presentation.
Among the delicious and diverse menu offerings were: Shredded Buffalo Fry Bread Tacos, Bananas Foster Flambe, Stuffed Arancini, Chocolate Meringue, Lobster and Gruyere Macaroni Bites, Chocolate-Hazelnut, Strawberry-Lychee, and S'mores Chocolate Cups, Tres Leches Cake, Philadelphia Sushi Rolls, Camarones A La Diabla and Lime Carlota, a Mexican dessert with layers of maria cookies, three chilled creams, kiwi and fresh berries.
The winning savory dish was Shrimp Ceviche Acapulco Style topped with a miniature crab cake, created by Sous Chef Josh Deuel, Lead Line Cook Julio Romero and Associate Executive Director Kathy Dilger. For sweets, the winner was Sushi Style Confections, sweet crispy filled sushi rolls crafted by Sous Chef Bill Hill, Line Cook Chris Cox and Director of Human Resources, Darlene Hanefeld. Executive Chef Adrian Snow, Line Cook Michael Prieto and Finance Director Karen Lux took home the decorations category with a Western-themed station.
At Wind Crest, there is always something delicious on the menu at the community's six on-site restaurants. Whether it's a casual lunch at the Mile High Café, drinks at the Timberline Tavern or dinner with friends at Burton's, residents appreciate that every dish is prepared fresh by expert chefs at the moment of service.
"The Taste of Wind Crest is a wonderful opportunity for our culinary professionals to express their creativity and share their unique gifts with the community," said Nicole Norton, Interim Director of Dining. "It's fun to get the Executive Team members involved for a little friendly competition and of course, everyone enjoys the delicious food. This event was extremely successful, and I continue to receive feedback from residents about the dishes and the wonderful atmosphere. We're already looking forward to the next one this fall."
