Food Show at Eagle's Trace Highlights Great Taste and Variety

Residents meet with vendors, sample delicious products

HOUSTON, TX---Residents of Eagle's Trace, the Erickson Living retirement community in West Houston, feasted on Angus beef and whole fresh trout, sampled crisp vegetables and taste-tested Blue Bell ice cream.
The occasion was the 1st Annual Food Show in June sponsored by the Eagle's Trace Dining Services Department.  The expo featured the food distributors and vendors utilized by the retirement community.
"We successfully showcased the quality of product we purchase as well as the variety," described Jim Rondinelli, Director of Dining Services at Eagle's Trace.  "The vendor representatives were completely engaged with our residents to make it both educational and fun."
Kay Foster agreed.  The Eagle's Trace resident serves as chairperson of the community's Dining Services Committee.   "It was a creative way for residents to learn more about our menu selections, and of course, sample new offerings.  I particularly enjoyed the cheese-tasting section."
"By listening to our feedback, Jim and his team enhance our daily dining experience and further validate the best decision I ever made---to move to Eagle's Trace," said Ms. Foster.
Three distributors for Eagle's Trace showcased their products.  Sysco served Certified Angus Beef from Freeman Meats, the same distributor for Taste of Texas Restaurant.
Southwest Seafood displayed whole fresh salmon and trout, catfish and tilapia fillets - all of which are served at Eagle's Trace.
Brothers Produce spoke to the benefits of the "Produce Alliance," a consortium of Erickson Living nationwide produce distributors designed to promote product freshness and local farm partnerships.
Other vendors included Blue Bell Ice Cream, Farmland Pork Products, Sara Lee, Tyson Chicken and Ventura Foods.
The Dining Services Department of Eagle's Trace has ninety employees, including catering staff and student servers.  The Culinary Team prepares an average of 450 meals daily in the community's distinct dining areas.
